Pan Fried Cauliflower




One pound Cauliflower, cut into florets
1/2 cup Fresh Bread Crumbs
2 leaves Fresh Oregano, chopped
1 tablespoon Butter
1 tablespoon Vegetable Oil
Salt, Pepper to taste

Preheat a skillet to medium-high heat, add butter and vegetable oil.  Add cauliflower florets to the pan, season with salt and pepper, and saute for 5 minutes.  Add bread crumbs and chopped oregano.  Saute for another 3-4 minutes, until the florets are golden brown.

Transfer to a platter and serve.

Serves 3-4

*To make fresh bread crumbs:  take two slices of your favorite bread (3 days old is perfect), and cut the crust off.  In the food processor, pulse until you get the size bread crumb you like.
