Roasted Poblano Relish



3 Poblano Peppers, seeded
1/2 Sweet White Onion
5 Garlic Cloves
1 Jalapeno, seeded
1 tablespoon Lime Juice
1 tablespoon Apple Cider Vinegar
1/2 cup Cilantro, chopped
1/4 cup Extra Virgin Olive Oil + 1 tablespoon
Salt, Pepper to taste

Preheat the oven to 425 degrees F.  Chop all the vegetables into large pieces.  Season with salt, pepper, and toss all together with one tablespoon olive oil.  Spread evenly on a baking sheet and bake for 30 minutes.  Let vegetables cool for about 15 minutes.

In a food processor, blend all the roasted vegetables, lime juice, cider vinegar, and the rest of the olive oil. Fold in chopped cilantro and enjoy!!!

Goes well with fish, steak, hamburger, and chips...
