Fresh Zucchini Salad


1 Large Zucchini, thinly sliced
2 tablespoons Fresh Lemon Juice
2 tablespoons plus 1 teaspoon Extra Virgin Olive Oil
2 tablespoons Fresh Dill, chopped
2 tablespoons Fresh Parsley, chopped
2 tablespoons Feta Cheese
2 tablespoons Pine Nuts
Salt, Pepper, to taste 

Serves 3-4

Arrange thinly sliced zucchini slices on a plater.  Drizzle with lemon juice and 2 tablespoons of Olive Oil.  Season with salt and pepper.  Cover with plastic wrap and let them marinate for one hour in a refrigerator. 

Top with dill, parsley, feta, and pine nuts.  Drizzle with the rest of the oil.

*Use a Mendoline to slice your zucchini to get even slices.  Excellent side dish for a party..
