Brownies with Peanut Butter Frosting


1 box Chocolate Brownie Mix

Peanut Butter Frosting

1/2 pint Heavy Whipping Cream
1/8 cup Powder Sugar
1 teaspoon Vanilla Extract
1/4 cup Mascarpone Cream
1/4 cup Chunky Peanut Butter

Prepare brownie mix according to package directions.  Let them cool completely.

Using electric mixer, whip heavy cream on medium-high speed for couple of minutes.  Add powder sugar and vanilla extract, mix for one more minute.  Add the rest of the ingredients.  Mix well, until smooth.

Spread frosting over cooled off brownies.  Let it sit in a refrigerator for 2-3 hours, for the frosting to set.

Serves 6-8

Peanut Butter Cream Cheese Sliders


Cookie Dough

1/2 cup Butter, room temperature
1/2 cup White Sugar
3/4 cup Brown Sugar
2 Eggs
2 1/2 cups Flour
1 teaspoon Baking Soda
1 teaspoon Salt

Preheat the oven to 350 degrees F.  Cream butter, add white and brown sugar, mix well. Add eggs, mix well again.  Add flour, soda, and salt, and mix on low speed until all incorporated together.
Bake for 9-10 minutes or until the edges are golden.

Makes about 30 cookies.

Peanut Butter Cream Cheese Filling

1/4 cup Whipped Cream Cheese
1/3 cup Chunky Peanut Butter
2 tablespoons Powder Sugar

Mix all the ingredients together until smooth. Set aside until ready to use.

Reserve 12 cookies to make 6 cookie sliders.

*Rich and creamy filling. Just like eating peanut butter cheesecake between two cookies...

Peanut Butter Cheesecake Squares


Filling
2 (8 oz) Cream Cheese packages, room temperature
1/2 cup plus 2 tablespoons Brown Sugar
1/4 cup Peanut Butter
1/3 cup Milk
2 Eggs
1/2 teaspoon Salt
1/2 cup Peanut Butter Cups, minis

Crust
4 oz Wafer Cookies
1/2 cup Roasted Peanuts, unsalted
2 tablespoons Butter, melted

Topping
1/4 cup Peanut Butter Cups
1/4 cup Roasted Peanuts, chopped

Preheat oven to 350 degrees F. Crust: In a food processor combine wafer cookies and roasted peanuts. Transfer waffle mixture into a small bowl and add melted butter. Press mixture firmly on the bottom of greased 8 x 8 x 2.5-inch baking dish.  Bake for 8 minutes and then let it cool for about 10 minutes.

Filling: Using electric mixer, beat cream cheese, brown sugar, and peanut butter. Add eggs one at a time and then milk, mixing until incorporated. Add a pinch of salt. Fold in peanut butter cups.

Pour the filling into prepared crust. Bake for 40 minutes, until the center is almost set but not all the way.

Remove from the oven and top with the rest of the chopped peanuts and peanut butter cups, so they can melt.

Refrigerate for few hours or over night. Cut into pieces and Enjoy!!!!
