Potato Cakes


2 cups Garlic Mashed Potatoes
1/4 cup Parmesan Cheese, grated
3 tablespoons Cilantro, chopped
Freshly Ground Black Pepper
1/2 cup Panko Bread Crumbs
1 tablespoon Butter
2 tablespoons Olive Oil
Sour Cream & Hot Sauce, optional 

Heat the oil with the butter in a non-stick skillet over medium-high heat.

In a bowl, mix first four ingredients.  Form the mixture into patties, makes about 8.
Coat the potato patties in the panko bread crumbs.

Cook patties for about 5 minutes, turn and cook for another 3-4 minutes, until golden brown.

Makes 8 cakes.

Serve with sour cream and hot sauce.

*Perfect way of using left over mashed potatoes.  Serve them for breakfast or at lunch with a green salad.
