Watermelon and Grape Salad with Prosciutto


2 cups Watermelon, cubed
1/2 cup Red Grapes, cut in half
4 slices Prosciutto
1 tablespoon Pine Nuts
1 teaspoon White Balsamic Vinaigrette
1 tablespoon Extra Virgin Olive Oil
1 oz Parmesan Cheese
4 leaves Fresh Basil
Pinch of Cayenne Pepper
Salt and Pepper, to taste

Arrange watermelon cubes on the platter, top with grapes, and season with salt, pepper, and a little of cayenne. Place prosciutto pieces over the fruit, top with pine nuts. Drizzle with balsamic and olive oil. Using a vegetable peeler shave Parmesan cheese over the salad and finish with chopped basil.

Serves 2-3
