Grilled Vegetables


2 Bell Peppers
1 Eggplant
1/2 pound Shitake mushrooms
3 Endives
2 tablespoon good olive oil
1/4 tsp chili flakes
Salt, Pepper to taste
2 tablespoon crumbled Feta
Fresh Basil thinly sliced

Slice peppers into big pieces, and slice eggplant 1/2 inch thick.  Halve endives, leaving mushrooms whole.  Drizzle olive oil, season with chili flakes, salt, pepper. Grill eggplant and endives on both sides. Grill peppers and mushrooms in a grilling pan. Veggies are ready when you see nice grill marks.
Top with feta and basil.
Serves 4-6

*Grill any vegetables that you like, use your imagination!!!
