1 Fresh Mango diced
1 Cucumber seeded and diced
1/8 cup Red Onion diced
2 Garlic cloves
1/2 Jalapeno seeded and diced
1/2 cup Cilantro chopped
Juice of one Lime
1/8 cup good Olive Oil
Salt and pepper, to taste
Mix all ingredients and refrigerate for at least an hour so all the flavors come together.
Serve over grilled fish, steaks, tacos, or just with chips. Better yet, make it a day ahead :) Yummmmmm...
